Originally, this was due to the composition of sand and clay from the surrounding area - this mixture was used to make terracotta bricks, the shade of which became a symbol of Bologna. Food in Bologna is a chapter in itself - the meat sauce ragù alla Bolognese and the cold cut mortadella both come from here. However, be careful - don't look for spaghetti bolognese here.
